Beet, Carrot & Apple Salad with Ginger Dressing

Ingredients

  • 4 Tbsp Lime juice
  • 2 Tbsp Honey
  • 2 Tbsp Olive oil
  • 1 3/4 Cups Carrots, peeled and grated raw
  • 1 3/4 Cups Apple, peeled and grated raw
  • 1 3/4 Cups Beet root, peeled and grated raw
  • 1 Tbsp Grated ginger fresh

Instructions

  1. Prepare the raw ingredients by peeling and grating the carrots, apple and beet root, combining in a large bowl.

  2. Mix the lime juice, honey, ginger and olive oil together in a separate bowl and pour over the beet mixture.

  3. Refrigerate until ready to serve. Enjoy!
