Chicken Enchiladas

Makes 6 Servings. Each serving: 329 Calories; 20C/6F/45P

Ingredients

  • 1 kg Boneless, Skinless Chicken Breast
  • 1 Onion, Diced
  • 1 can Diced Green Chilies
  • 1 can Enchilada Sauce
  • 1 cup Chicken Broth
  • 1 can Black Beans, Rinsed & Drained

Instructions

  1. Mix all ingredients into your slow cooker.

  2. Cook on low for 4-6 hours.

  3. Once cooked, shred chicken and stir into slow cooker sauce.

  4. Serve on a fiber-rich wrap - my favorite is Oroweat!
