Chicken Fajitas

Makes 6 Servings. Each Serving: 252 Calories; 12C/4F/40P

Ingredients

  • 1 kg Boneless, Skinless Chicken Breast
  • 3 Bell Peppers, Chopped or Sliced
  • 1 Onion, Chopped or Sliced
  • 1 can (796 ml) Diced Tomatoes
  • 1 Jalapeno, Diced (Seeds Removed)
  • 2 tbsp Lime Juice
  • 3 tbsp Taco Seasoning

Instructions

  1. Mix all ingredients into a slow cooker.

  2. Cook on low for 4-6 hours.

  3. Once cooked, shred the chicken and mix it back into a slow cooker.

  4. Top a fiber-rich tortilla or add cauliflower rice to a bowl!
