Cookie Dough Balls

Make 11 Servings. Each Serving: 57 Calories; 8C/3F/.5P - 3.5 Fibre

Ingredients

  • 1/4 Cup Coconut Flour
  • 1 Tbsp Coconut Oil
  • 4 Tbsp Xantham Gum (starch replacement to add fibre)
  • 1/2 tsp Vanilla
  • 1/4 tsp Salt
  • 1/4 Cup Walden Farms Maple Walnut Syrup (this is 0 calorie, but there are many other light options that may add more carb)
  • 3 Tbsp Chocolate Chips
  • 3 Tbsp Unsweetened Apple Sauce
  • 2 Tbsp Stevia (or sweetener of choice)

Instructions

  1. Combine dry ingredients into a bowl.

  2. Add your melted oil (or butter) along with the rest of the wet ingredients and stir until a thick dough forms.

  3. Fold in chocolate chips and form into 11 balls.

  4. Store in the fridge or freezer for freshness or bake into cookies if you prefer!
