Pour juice from canned pineapple chunks into a small mixing bowl. Add soy sauce, garlic, ginger and honey, whisking to combine. Add Xanthan Gum and stir until mixed through.
Place the chicken in the slow-cooker and pour the pineapple mixture over the chicken. Cover and cook on low for 4-6 hours or until the chicken is cooked through.
Add bell pepper and pineapple chunks the last 30 minutes of cooking time. I like to serve mine over a bed of rice. Enjoy!
