Slow Cooker Pineapple Chicken

Makes 6 Servings. Each Serving: 326 Calories; 4F/38C/37P - 2g Fibre

Ingredients

  • 1 Kg Boneless, skinless chicken breast raw
  • 1 20 oz Can pineapple chunks, in juice
  • 1 Tbsp Soy sauce
  • 1 Clove Garlic
  • 1 tsp Ginger
  • 1 Red bell pepper
  • 1/3 Cup Honey
  • 5 grams Xanthan Gum

Instructions

  1. Pour juice from canned pineapple chunks into a small mixing bowl. Add soy sauce, garlic, ginger and honey, whisking to combine. Add Xanthan Gum and stir until mixed through.

  2. Place the chicken in the slow-cooker and pour the pineapple mixture over the chicken. Cover and cook on low for 4-6 hours or until the chicken is cooked through.

  3. Add bell pepper and pineapple chunks the last 30 minutes of cooking time. I like to serve mine over a bed of rice. Enjoy!
