Oatmeal Protein Cookie Sandwiches
Craving a cookie? How about a protein cookie sandwich!
I found this recipe on Instagram (and tweaked it a bit of course haha) and posted it on my IG story and people were going crazy for it! I decided I better share it with the rest of you so you can give it a try too!
Oatmeal Protein Cookie Sandwiches
Makes 3 Cookie Sandwiches. Each Cookie Sandwich 122 Calories; 13C/2F/13P
Ingredients
- 40 grams Quick Oats
- 50 grams Egg Whites
- 15 grams Protein Powder
- 2 grams Coconut Flour
- 2 grams Stevia
- 2 grams Vanilla Extract
- 2 grams Baking Powder
Frosting
- 90 grams Fat Free Cream Cheese
- 5 grams Protein Powder
- 2 grams Coconut Flour
- 2 grams Stevia
Instructions

Preheat your oven to 350 degrees. Add your oats and water into a microwave safe bowl. Remember just enough water to cover the oats. Put them in the microwave for 90 seconds

Once done, a lot of the water should’ve been soaked up. Add your egg whites and mix them in. Put the rest of your dry ingredients into a separate bowl and mix together to avoid clumping. Add the wet ingredients to the dry ingredients and mix until you have a thick cookie batter like consistency. If it is still too runny add to the freezer for 20 minutes to thicken up

Cover your pan with parchment paper or spray with non-stick cooking spray

Add 6 balls of dough to your parchment and then shape into fat cookies. They will not move much when baking so you can shape into whatever shape you want them to be. Bake for +/- 10 minutes

While those are cooking, add your frosting ingredients into a bowl and mix. Put in the fridge to thicken

Once cookies have cooled, separate your frosting into 3 equal portions and sandwich between 2 cookies
