Craving Mexican Food?
Love Mexican food but need ideas on how to “healthify” it?
Here are my top recommendations to soothe those cravings:
Quesadilla
Grill two Mama Lupe Tortillas (available here at Low Carb Canada) with 30g Light Shredded Tex Mex Cheese in a frying pan and spritz with non-stick cooking spray (PAM butter flavour is my favourite). Add shredded chicken, grilled onion, peppers and tomatoes as desired.
Tacos
Stuff two Old El Paso Crunchy Shells (look for the ones that have two shells for 13C/4.5F/1P as there are many different kinds) with 100g cooked extra lean ground beef or bison seasoned with taco seasoning. Top with lettuce, tomato, 30g Light Shredded Tex Mex Cheese as desired.
Nachos
Spread 32g Quest Tortilla Chips or 1 oz Protes Zesty Nachos (available at Popeyes) across a microwave safe plate. Top with 30g Light Shredded Tex Mex Cheese and shredded chicken, onions, peppers and tomatoes as desired. Microwave until cheese has melted.
Top any of the above with salsa, hot sauce, Plain Fat Free Greek Yogurt and Tomatillo Guacamole (available at Costco) to safe that extra added fat!
Taco Salad
Fill a bowl with chopped lettuce and diced tomato, 100g cooked extra lean ground beef or bison seasoned with taco seasoning, 32g Quest Tortilla Chips or 1 oz Protes Zesty Nachos (available at Popeyes), 30g Light Shredded Tex Mex Cheese, toss in Bolthouse or Walden Farms Salad Dressing.
