Slow Cooker banh mi pork

Banh Mi are Vietnamese style sandwiches that are bursting with flavour. They typically have a sweet and spicy pork combination and are one of my favourite sandwiches to throw together! 

Slow Cooker Banh Mi Pork

Makes 6 Servings. Each Serving: 289 Calories; 4F/20C/42P - 1 Fibre

Ingredients

  • 2.5 lbs. Lean pork tenderloin
  • 1 Jalapeno diced
  • 1.5 Tbsp Raw ginger minced
  • 1/2 Cup Low sodium soy sauce
  • 1/4 Cup Rice vinegar
  • 1/3 Cup Brown sugar
  • 1 Cut Shredded carrots
  • 1 Cucumber sliced
  • 1/4 Cup Cilantro

Instructions

  1. Add the pork tenderloin to the slow cooker.

  2. Mix together the jalapeno, ginger, garlic, soy sauce, rice vinegar and sugar in a bowl.

  3. Pour the mixture over the pork and cook on low for 4 hours. Serve with carrots, cucumbers and cilantro on tacos, a bun or by itself!
