Healthy Chocolate Chip Muffins

Double chocolate chip muffins with a peanut butter twist!

These double chocolate chip muffins are made lighter with ingredients like apple sauce, Greek yogurt and powdered peanut butter! Add a few chocolate chips and you’ve got yourself a delicious afternoon snack. 

Healthy Chocolate Chip Muffins

Makes 9 Servings. Each Serving: 69 Calories; 2F/4P/11C - 2 Fibre

Ingredients

  • 1/4 Cup Unsweetened cocoa powder
  • 2 Tbsp Ground oat flour
  • 2 Tbsp Truvia brown sugar blend
  • 8 Tbsp PB2 Powdered peanut butter
  • 1/4 Cup Unsweetened apple sauce
  • 1/4 Cup Plain fat-free Greek yogurt
  • 1 Egg white
  • 30 grams Semi-sweet chocolate chips
  • 1/2 tsp Baking soda
  • 1/4 tsp Baking powder
  • 1/4 tsp Salt

Instructions

  1. Preheat the oven to 350 degrees C. Spray 9 cavities of a muffin tin with non-stick spray. Fill the remaining 3 cavities with water to ensure even baking. (Do not use muffin liners! The muffins will not come out well)

  2. In a large bowl, combine the cocoa powder and oat flour (blend regular oats until a flour consistency), baking powder, baking soda, salt and brown sugar Truvia blend. Make sure to measure the oat flour AFTER blending.

  3. Mix together the PB2 (powdered peanut butter) with 4 Tbsp of water until a creamy peanut butter consistency is formed. 

  4. In a separate bowl combine the mixed PB2, apple sauce and Greek yogurt. Mix until completely combined.

  5. Stir in the chocolate chips, and evenly distribute the mixture to the muffin pans.

  6. Bake for 18-22 minutes or until a toothpick inserted in the middle comes out clean. Enjoy!
