Berry Protein Cheesecake

Makes 8 Servings. Each Serving: 212 Calories; 14C/3F/30P - 4g Fibre

Ingredients

Crust Ingredients

  • 4 Scoops Vanilla protein powder
  • 1 Cup Old fashioned oats
  • 1 whole Egg
  • 3/4 Cup Unsweetened Cashew or Almond milk
  • 1/4 tsp salt
  • 1/4 Cup Splenda (depending on how sweet you like it)
  • Splash Vanilla extract
  • Liberal amounts cinnamon, nutmeg, or pumpkin pie spice blend

Filling Ingredients

  • 4 Scoops Vanilla protein powder
  • 8 Ounces Fat-free cream cheese
  • 6 Tbsp Unsweetened Cashew or Almond milk
  • 2 Big handfuls of your favourite frozen berries

Instructions

Crust Directions

  1. Preheat the oven to 350 degrees F.

  2. Mix the crust ingredients together.

  3. Spray a pie plate with non-stick cooking spray and spoon out the batter onto the middle of the pan, then gently spread. Try to evenly distribute the batter.

  4. Bake for about 12 minutes. Time and temp may vary depending on your oven.

  5. Let the crust cool completely before adding the toppings.

Filling Directions

  1. Combine all the ingredients in a mixing bowl except the berries. Once the filling has a smooth texture, add the berries and mix.

  2. Spread the filling evenly over the cooled crust.

  3. Chill in the fridge until set and cut into 8 pieces. Enjoy!
