Simple to make, and with minimal ingredients, this easy to make banana muffin recipe is going to make the perfect addition to your afternoon snack, lunch, or pre-workout snack rotation. 

Easy Banana Muffins

Makes 12 Servings. Each Serving: 125 Calories: 26C/3P/OF - 1 Fibre per muffin

Ingredients

  • 3 Medium Ripe bananas mashed with a fork
  • 1/4 Cup Unsweetened apple sauce
  • 1 1/2 Cups All purpose flour
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 Cup Light Splenda brown sugar
  • 1/4 Cup Egg whites
  • 1/2 tsp Vanilla extract
  • Baking spray

Instructions

  1. Preheat oven to 350°F and grease your muffin tins with non-stick baking spray.

  2. In a bowl, combine the flour, baking soda and salt. Stir the mixture until combined.

  3. Add the brown sugar, egg whites, apple sauce and vanilla. Mix well and fold in the mashed bananas, continuing to mix until evenly combined.

  4. Pour the batter into muffin tins and bake for 20 to 30 minutes, or until a toothpick inserted in the center comes out clean. Enjoy!
