Pumpkin Spice Muffins

It may not be “pumpkin spice season” anymore, but these babies are delicious all year round!

Pumpkin Spice Muffins

Makes 12 Muffins. Each Muffin: 119 Calories; 18C/1F/7P - 2 Fibre

Ingredients

Muffin Batter

  • 2 Cups Kodiak Cake Pancake mix
  • 1/2 Cup Unsweetened apple sauce
  • 1/2 Cup Pumpkin puree (not pumpkin pie filling)
  • 3/4 Cup Egg whites
  • 1/2 Cup Unsweetened almond milk
  • 1/2 Cup Splenda brown sugar
  • 1 tsp Pumpkin pie spice
  • 1 tsp Cinnamon

Cream Cheese Filling

  • 6 tsp Splenda brown sugar
  • 6 Tbsp Fat free cream cheese
  • 1 tsp Pumpkin pie spice

Instructions

  1. Pre heat your oven to 350 F and mix all muffin batter ingredients together in a bowl.

  2. Mix all filling ingredients in a separate bowl. Spray a muffin tin with non-stick cooking spray.

  3. Fill 12 muffin tins half full with muffin mix and a dollop of filling inside each one. Top the rest of the muffin tin up with batter.

  4. Bake for 20-30 minutes at 350 degrees until a toothpick comes out clean. Enjoy!
