Skinny Christmas Morning Wife Saver

This is a take on a christmas favourite that my mom always made us for breakfast!

Make this recipe the night/day before, let stand in the fridge and serve the next morning.

Skinny Christmas Morning Wife Saver

Makes 7 Servings. Each Serving: 327 Calories; 34C/10F/22P

Ingredients

  • 14 Slices Whole wheat bread, crusts removed (I used the Buttercup Brand but I think Silver Hills Little Big Bread would be great too!)
  • 8 Slices Lean back bacon or ham (I used Freybe from Costco)
  • 140 Grams Light cheddar cheese (I used 7 slices of Cracker Barrel)
  • 1 Cup Egg whites
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Dry mustard powder
  • 1/4 Cup Minced onion
  • 1/4 Cup Finely chopped green pepper
  • 3 Cups Skim milk
  • Dash Tabasco or Franks Red Hot Sauce
  • 1 tsp Worcestershire
  • 2 Tbsp Butter, melted

Instructions

  1. Spray a 9x13” pan with non-stick cooking spray and lay out 7 pieces of bread (I laid out 6 full slices and then cut one in half to fit at the end of the pan).

  2. Lay slices of cheese and back bacon and then cover with the other 7 slices of bread. In a bowl mix together all of the other ingredients, except for the butter.

  3. Cover and let stand overnight in the fridge. In the morning melt the butter and pour over top.

  4. Bake uncovered for 1 hour at 350 degrees. Let set for 10 minutes before serving.
