Korean Inspired Meatballs

Sweet and spicy blend in these delicious Korean-inspired meatballs that will have you making them on repeat! 

Korean Meatballs

Makes 33 Meatballs. Each Meatball: 93 Calories; 4C/4F/9P

Ingredients

  • 1 Kg Extra lean ground turkey
  • 500 grams Extra lean ground beef
  • 4 Slices Whole wheat bread, ground (I like Little Big Bread or Compliments brand)
  • 2 Cloves Garlic, minced
  • 2 tsp Ginger, minced
  • 3 Tbsp Soy sauce
  • 1/2 Cup Egg whites
  • 2 Scallions (white part chopped) optional

Meatball Glaze

  • 3 tsp Rice vinegar
  • 4 Tbsp Soy sauce
  • 3 Tbsp Spenda or Truvia Brown Sugar
  • 2 tsp Sesame oil
  • 2 Cloves Garlic, minced
  • 2 tsp Ginger, minced

Instructions

  1. Preheat your oven to 400 degrees and spray 2 cookie sheets with non-stick cooking spray.

  2. Combine glaze ingredients together in a bowl and stir. Combine meatball ingredients in a large bowl and mix well using your hands.

  3. Divide the meatball mixture evenly to make the meatballs. This makes 33 meatballs, split the meatballs evenly amongst two cookie sheets.

  4. Bake each pan for 20 minutes then broil each pan for 5-6 minutes. Brush the glaze on and broil each pan for another 2-3 minutes.
