Sweet & Sour Meatballs
Delicious, sticky, sweet and sour meatballs without all of the added sugar!
I love a good meatball recipe, but not all of the extra calories that are often added to the sauce! This recipe uses Sugar-Free Ketchup and sweetener alternatives that won’t have you missing the originals!
Sweet & Sour Meatballs
Makes 18 Meatballs. Each Meatball: 61 Calories; 2C/1F/13P
Ingredients
- 900 grams Extra Lean Ground Chicken
- 2 Slices Silver Hills Little Big Bread (for bread crumbs)
- 1/2 Cup Finely chopped onion
- 1/4 Cup Egg whites
- 1 Tbsp No Sugar Added Ketchup
- 1/2 Cup No calorie sweetener
- 5 Tbsp Vinegar
- 2/3 Cup Water
- 3 Tbsp Soy sauce
- 1 tsp Xantham gum thickener
Instructions
-
Blend the slices of bread in a blender to make bread crumbs. Mix the meat, breadcrumbs, onion, and egg whites in a bowl and form 18 balls.
-
Spray a frying pan with non-stick cooking spray and fry the meatballs evenly on each side so they are a light brown in colour.
-
Finish cooking the meatballs until cooked through in the oven (I had it set at 400).
-
While the meatballs are cooking, in a saucepan combine ketchup, sweetener, vinegar, water, soy sauce and heat on medium until bubbles start to form. Add in the thickener and turn down the heat, continue stirring until sauce thickens
-
Evenly coat the meatballs in the sauce and enjoy!
