Spinach Feta Bake

Spinach, feta, and eggs – a healthy breakfast bake to make on the weekend, or meal prep and heat up for the week!

Spinach Feta Bake

Makes 6 Servings. Each Serving: 116 Calories; 13C/4F/8P - 2 Fibre per serving

Ingredients

  • 10 oz. Frozen Spinach
  • 1/2 Cup Green onion, fresh
  • 75 Grams Feta cheese, crumbled
  • 2 Tbsp Dill weed, dried
  • 2 Tbsp Parsley, chopped
  • 2 Tbsp 100% Parmesan light (I used Kraft brand)
  • 1/2 Cup Whole wheat flour
  • 1 tsp Baking powder
  • 2/3 Cup 1% Partly Skim milk
  • 1/3 Cup Egg whites
  • 1/2 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. Preheat your oven to 400° and lightly spray a pie dish with cooking spray.

  2. Mix spinach, onions, dill, parsley, feta cheese in a bowl, and spoon into the pie dish. I would have preferred to use light feta but the store was all out when I went.

  3. Sift flour and baking powder in a medium bowl and add remaining ingredients to the bowl. Mix well and pour into the pie dish.

  4. Bake 25-28 minutes or until knife comes out clean from the center. Let it stand for 5 minutes. Enjoy!
