Chocolate Banana Cupkins

I present… the cupkin! A perfect balance of the texture of a muffin with the sweetness (and frosting) of a cupcake combined!

Chocolate Banana Cupkins

Ingredients

Muffin Ingredients

  • 6 Tbsp Powdered Peanut Butter (prepared with 3 Tbsp Water)
  • 250 grams Banana (mashed)
  • 1/2 Cup Unsweetened Apple Sauce
  • 60 grams Walden Farms Syrup
  • 1 tsp Vanilla
  • 1/3 Cup Egg Whites
  • 1 tsp Baking soda
  • 1 Tbsp Cocoa Powder
  • 1 tsp Cinnamon
  • 1 1/2 Cups Whole Wheat Flour

Frosting Ingredients

  • 2 tsp Sweetener
  • 1/2 Cup 1% Cottage Cheese (blended until smooth)
  • 1 Scoop Protein Powder
  • 1/4 Cup Skimmed Milk

Instructions

  1. Preheat your oven to 350. Combine all of the muffin ingredients and mix well. Spray your muffin with non-stick cooking.

  2. Bake for ~18-20 minutes. Let cool completely then frost and enjoy!
