Greek Pasta Salad

You’re going to be a hit at the next potluck with this one

Greek Pasta Salad

Makes 6 servings. Each serving: 230 calories; 32C/9F/8P

Ingredients

Salad

  • 2 cups whole wheat pasta, measured dry. I used Brown Rice Fusilli
  • 2 cups cherry tomatoes, quartered
  • 2 cups cucumber, diced
  • 2 cups bell peppers, diced
  • ½ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 90 g light feta cheese, crumbled

Dressing

  • 3 tbsp extra-virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook your pasta and let cool. Once cooled, in a bowl mix in all of your vegetables and the cheese.

  2. Stir together your dressing ingredients in a separate bowl then mix well with your pasta and vegetables.

  3. If you'd like to make this a complete meal on its own cook and cube chicken breast and add to it! Obviously this is not included in the nutrition information but that would solve your lunch meal prep for the week.
