Barbacoa Beef

Move over, Chipotle, there’s a new chef in the kitchen

Barbacoa Beef

Makes 5 servings. Each serving: 296 calories; 8C/12F/38P

Ingredients

  • 2 lbs Sirloin Tip Roast
  • ½ cup Onion, Diced
  • ½ cup Chicken Broth
  • 1 (4.5oz Can) Diced Green Chilies
  • 1 tbsp Garlic Powder
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Lime Juice
  • 1 tbsp Oregano
  • 2 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper
  • ½ tsp Round Cloves
  • 2 tbsp Chili Powder

Instructions

  1. Combine all ingredients in slow cooker.

  2. Cook on low for 4-6 hours.

  3. Pull apart the beef and mix it back into the sauce.

  4. Serve on rice, cauliflower rice (or a mix of both!), or enjoy on a fiber-rich wrap.
