Chicken Lettuce Wraps

Chicken Lettuce Wraps

Makes 5 Servings. Each Serving: 319 Calories; 23C/15F/34P

Ingredients

  • 2 lbs Boneless, Skinless Chicken Thighs
  • 2 cups Carrots, Shredded
  • 2 cups Mushrooms, Diced
  • 80 z Water Chestnuts, Chopped
  • 1 tbsp Garlic Powder
  • 3 tsp Sesame Oil
  • ½ cup Low Sodium Soya Sauce
  • 1 tbsp Rice Vinegar
  • 2 tsp Ground Ginger
  • 2 tbsp Powdered Peanut Butter, Prepared (I used PB & Me)
  • 1 tbsp Honey
  • ¼ tsp Pepper
  • 1-2 tbsp No Calorie Sweetener (Optional)

Instructions

  1. Combine all ingredients in slow cooker.

  2. Cook on low for 4-6 hours.

  3. Shred chicken and mix back into sauce.

  4. Enjoy on lettuce wraps!
