Making Vegetables Convenient

I am going to be completely honest, getting in my veggies can be tough sometimes.

Here are a few of the convenient things we do in our house to make sure we get our micronutrients in when time isn’t on our side:

– Keep a veggie platter on hand. If you find these pretty expensive for what you get, then wash and cut up a bunch of fresh veg like carrots, broccoli, celery and mini cucumbers and keep them in a container in the fridge for easy nibbling access.

-Throw some riced or mashed cauliflower in the next time you have rice or mashed potatoes.

-Keep frozen vegetables in your freezer and throw them into your eggs, the side of your meal or mix them right into some slow cooked meals. I like spinach, peppers, onions, and peas for some examples.

-Either keep salad vegetables prepped and ready to go in the fridge or have the pre-washed and cut up lettuce or Eat Healthy salad kits on reserve in the crisper.

-Buy cauliflower pizza crust to make a pizza on.

-If you don’t have time to wash and chop then purchase the pre-cut up versions from the produce section of the grocery store.
