Slow Cooker Cabbage Roll Casserole

With a healthy twist, this recipe takes the hard work out of making cabbage rolls without compromising flavour! Throw in the ingredients, set the timer and you will have a cabbage roll “esque” meal at your fingertips.
Slow Cooker Cabbage Roll Casserole
Makes 6 Servings. Each Serving: 200 Calories; 6gF/20gC/19gP - 6g Fibre
Ingredients
- 1.5 lbs Extra lean ground beef or extra lean ground turkey
- 2 Cups Chopped onion
- 1/2 Cup Chopped green pepper
- 3 Garlic cloves, crushed
- 1/4-1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Thyme
- 1 Small head of cabbage, coarsely chopped
- 1 Can (15 ounces) Plain, diced tomatoes
- 1/2 tsp sugar
- 1 Can (15 ounces) Plain tomato sauce (can add more if you like more sauce)
Instructions

Spray a crockpot with non-stick cooking spray.

Crumble the uncooked ground beef or ground turkey along the bottom of the crockpot.

Add the onions, garlic, green pepper, salt, pepper, thyme and cabbage.

Pour the can of diced tomatoes over the top of the other ingredients, stirring together.

Mix the sugar into the tomato sauce, then pour over the mixture in the crockpot. If you want more sauce, add another 8-15 oz. can of plain tomato sauce.

Cover and cook on high for 4 hours or low for 8 hours.
