Makes 15 Servings. Each Serving: 249 Calories; 5gF/3gC/40.5gP
Ingredients
- 76 oz. Pork Tenderloin
- 650 grams Sugar free BBQ sauce (I used G Hughes Smokehouse)
- 1 tsp Truvia brown sugar blend
- 1 tsp Garlic salt
- 4 Tbsp Apple cider vinegar
- 12 oz. Diet Pepsi, Cola Zevia
Instructions
Instant Pot/Pressure Cooker
-
Spray your Instant Pot or Pressure cooker with cooking spray and place the pork tenderloin in, pouring the diet Pepsi over top.
-
Stir together the BBQ sauce (but save 1/2 cup for later), brown sugar blend, apple cider vinegar and garlic salt and pour over the pork.
-
Place the lid on your Instant Pot sliding into locked position. Set it to cook for 45 minutes. Do a natural steam release for 10 minutes, then turn valve to vent position.
-
Once the float valve has dropped, remove the lid and use 2 forks to shred the pork into small chunks. Drain the liquid from the pot and mix the remaining BBQ sauce in with the shredded pork.
-
Serve on hamburger buns and enjoy!
Slow Cooker
-
Follow the above instructions for preparing the pork, but instead cook on low for 6 hours in your slow cooker before shredding the pork.
