Blueberry Crumble Breakfast Bake

who says you can’t have cake for breakfast?

This blueberry crumble breakfast bake may look and taste like cake, but it is a delicious balance of carbs and protein for a healthy breakfast or snack!

Blueberry Crumble Breakfast Bake

Makes 4 Servings. Each Serving: 224 Calories; 32C/4F/17P

Ingredients

  • 2 Cups Blueberries
  • 1 Cup Quick oats
  • 2 Scoops Vanilla protein powder
  • 1 tsp Cinnamon
  • 1/2 tsp Baking powder
  • 1/4 Cup Walden Farms Syrup (I used the Walden Farms Maple Syrup)
  • 1 Cup Skim milk
  • 1 tsp Vanilla extract
  • 3 Tbsp Egg whites
  • Pinch Salt

Instructions

  1. Preheat your oven to 375 degrees and spray a 8x8” or 9x9” baking dish with non-stick cooking spray. Sprinkle 1 1/2 Cups of blueberries in the bottom of the dish.

  2. In a bowl, mix together the dry ingredients. In a separate bowl mix together the wet ingredients. Mix together wet and dry ingredients then add the berries and gently push them into the top of the mixture.

  3. Sprinkle the remaining berries and a bit of extra cinnamon on top. Bake for 25-30 minutes. Enjoy!
