Protein Banana Muffins

These banana muffins will actually help you reach your protein goal.

Protein Banana Muffins

Makes 12 muffins. Each muffin is 120 calories; 16C/0F/12P

Ingredients

  • 1 cup ripe bananas, mashed (about 2-3 bananas)
  • 8 tbsp Egg Whites
  • ¼ cup unsweetened applesauce
  • ¼ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 150 g whey protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup no sugar added syrup (I used Walden Farms)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

  2. In a large bowl, mash the ripe bananas with a fork or potato masher.

  3. Add the egg whites, applesauce, Greek yogurt, and vanilla extract to the mashed bananas. Mix well until combined.

  4. In a separate bowl, whisk together the flour, whey protein powder, baking powder, baking soda, salt, and cinnamon.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. Add maple syrup to sweeten the batter.

  7. Divide the batter evenly among the muffin cups.

  8. Bake in the preheated oven for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
