Jalapeno Popper Casserole

Makes 6 servings. Each serving: 273 calories; 7C/9F/50P

Ingredients

  • 300 g Turkey Bacon, cut into small pieces
  • 500 g Chicken Breast, cut into bite-sized pieces
  • 1 cup 1% Cottage Cheese
  • 2 Cloves Garlic, minced
  • 1 tsp Salt
  • ½ Tsp Paprika
  • ¼ Tsp Pepper
  • 2 Jalapeños
  • 2 Green Onions, chopped
  • 340 g Frozen Cauliflower Rice
  • 120 g Light Shredded Cheese

Instructions

  1. Preheat oven to 350F.

  2. Chop the jalapeños into pieces

  3. Blend the cottage cheese, garlic, salt, pepper and paprika until smooth.

  4. In a pan cook the pieces of turkey bacon and chicken then drain any excess liquid.

  5. Thaw out the cauliflower rice then use a paper towel and squeeze out all the liquid from it.

  6. Add the blended cottage cheese, chicken, turkey bacon, green onion, jalapeños & the cauliflower rice to a baking dish, mix well and spread out evenly.

  7. Add shredded cheese on top bake for 20mins.

  8. After it's bake, broil it for 5 more minutes and it's done!
