Healthy Mac & Cheese
craving comfort food? i got you!
Sometimes you just need a little extra cheesy, pasta goodness. There’s no shame in making it healthier and sneaking some veggies in! This lighter mac and cheese recipe uses a bean based pasta called Banza. It is made from chickpea flour so the protein and fibre content is higher than normal pasta. There are other bean based pasta varieties that work just as well, or feel free to sub regular whole wheat pasta noodles.
Healthy Mac & Cheese
Makes 1 Serving. Each Serving: 357 Calories; 9F/40C/33P - 11g Fibre
Ingredients
- 50 grams Banza pasta or Pedon More Than Pasta (Serving size may vary depending on brand of bean pasta used)
- 60 grams non-fat plain Greek yogurt
- 30 grams light shredded cheese
- 1/2 Cup cooked broccoli
- 1 Slice bacon (pork or turkey bacon work well)
- Sprinkle nutritional yeast
- Sprinkle chili flakes
Instructions

Cook the pasta according to the directions on the box.

In a small bowl, combine the cheese and Greek yogurt. (You may want to add a splash of almond milk to the Greek yogurt if you do not want it to be super thick).

Once the pasta is done cooking, drain and add it back to the pot with the cheese mixture.

Heat up the bacon and broccoli and toss it in the pot with the cooked pasta and cheese mixture.

Combine it all thoroughly until the cheese melts and top with the nutritional yeast and chili flakes for extra flavour as desired.
