Beet, Carrot & Apple Salad with Ginger Dressing

Ingredients
- 4 Tbsp Lime juice
- 2 Tbsp Honey
- 2 Tbsp Olive oil
- 1 3/4 Cups Carrots, peeled and grated raw
- 1 3/4 Cups Apple, peeled and grated raw
- 1 3/4 Cups Beet root, peeled and grated raw
- 1 Tbsp Grated ginger fresh
Instructions

Prepare the raw ingredients by peeling and grating the carrots, apple and beet root, combining in a large bowl.

Mix the lime juice, honey, ginger and olive oil together in a separate bowl and pour over the beet mixture.
