Egg Bites

if you love Starbucks egg bites as much as i do then you are going to love this recipe!

I have made multiple attempts to perfect this recipe over the last couple weeks and finally found one I approve of! Here is the base that I came up with that managed to lower the cals but still give it a delicious creamy base. The extras are up to you!

Egg Bites

Makes 12 Egg Bites. Each Egg Bite: <50 calories

Ingredients

Egg Bite Base

  • 1 1/3 Cup (400g) Egg whites
  • 1/2 Cup (125g) 0% Cottage cheese
  • 3 Tbsp (45ml) Fat free creamer
  • 6 Tbsp (90ml) Fat free cream cheese

Roasted Red Pepper & Spinach

  • 1/2 Large Red pepper, sliced length wise into strips
  • 1 Cup Spinach, loosely packed

Bacon & Caramelized Onion

  • 1 Medium Yellow onion, diced
  • 6 Slices Bacon, cooked

Mozzarella & Caramelized Onion

  • 1 Medium Yellow onion, diced
  • 45 grams Skim Mozzarella cheese, shredded

Instructions

  1. Blend the base ingredients in a blender until smooth. Pre-heat oven to 350 F. Add additional add ins (as described below), or created your own fun flavours. Divide mixture evenly into 12 muffins pans sprayed with non-stick spray and bake for 15 minutes.

Roasted Red Pepper & Spinach

  1. For the Roasted Red Pepper, sliced a half red pepper into strips, lay on a cookie sheet that is covered in parchment paper and spritz with olive oil flavoured non-stick cooking spray. Roast the peppers for 45 minutes.

  2. Once roasted, chop the peppers into small pieces along with 1 cup of loosely packed spinach. Evenly distribute into 12 muffin tins sprayed with non-stick cooking spray. Pour the base mixture on top of each and bake at 350 degrees for 15 minutes.

Bacon & Caramelized Onion

  1. Thinly chop a medium size yellow onion and cooked in a pan with butter flavoured non-stick cooking spray until brown. Cook your sliced of bacon until cooked through and crispy. Chop the bacon into small pieces. Distribute the bacon and onion into muffin tins that have been sprayed with non-stick cooking spray and top up with the base mixture. Bake at 350 degrees for 15 minutes.

Mozzarella & Caramelized Onion

  1. Thinly chop a medium size yellow onion and cooked in a pan with butter flavoured non-stick cooking spray until brown. Once cooked, add the onion into muffin tins that have been sprayed with non-stick cooking spray and top up with the base mixture and a sprinkle of skim mozzarella cheese. Bake at 350 degrees for 15 minutes.
