Banana & Blueberry Muffin Recipes

Kodiak Cake mix and Bisquick are used to make these healthy muffins that clock in at under 90 calories each!

Blueberry Muffins

Makes 12 Muffins. Each Muffin: 76 Calories; 0F/15C/3P - 1 Fibre

Ingredients

  • 2 Cups Bisquick (you can also use Kodiak Cake Mix, the nutritional information would just be a bit different)
  • 1/2 Cup Unsweetened apple sauce
  • 1/2 Cup Almond milk
  • 3/4 Cup Egg whites
  • 1/4 Cup Walden Farms Syrup
  • 1 Cup Blueberries

Instructions

  1. Mix all the ingredients in a bowl except the blueberries. Once everything is mixed well, fold in the blueberries.

  2. Spray your muffin tins with non-stick cooking spray and divide the batter evenly into each of the 12 cups.

  3. Bake for 20 minutes at 350 degrees F. Enjoy!

Banana Muffins

Makes 12 Muffins. Each Muffin: 87 Calories; 1F/14C/7P - 2 Fibre per serving

Ingredients

  • 2 Cups Kodiak Cake Mix (You can also use Bisquick, the nutritional information would just be a but different)
  • 1/2 Cup Unsweetened apple sauce
  • 1/2 Cup Almond milk
  • 3/4 Cup Egg whites
  • 1/4 Cup Walden Farm Syrup
  • 1 Banana mashed

Instructions

  1. Mash your banana and mix all of the ingredients in a bowl.

  2. Spray your muffin tin with non-stick cooking spray and divide the batter evenly into each of the 12 cups.

  3. Bake for 20 minutes at 350 degrees F.
