Cinnamon Swirl Protein Pancakes

I love using the Kodiak Cake Power Cake pancake mix to make pancakes, waffles or even muffins! They are easy to prepare and a source of protein and fibre – whats not to love? As if they were not great enough already, I experimented and created a way to make them even more delicious with a cream cheese cinnamon swirl!
Cinnamon Swirl Protein Pancakes
Makes 2 Servings. Each Pancake: 302 Calories; 2F/40C/30P - 6 Fibre
Ingredients
- 1 Cup Kodiak Cake Power Cake Mix
- 1/2 Scoop Protein powder
- 1/4 Cup Egg whites
- 4 Tbsp Fat-free cream cheese (I used Kraft Philadelphia)
- 1 tsp Brown sugar blend (Splenda)
- 1/2 tsp Cinnamon
- 3/4 Cup Water
Instructions

In a large mixing bowl add the dry Kodiak Cake mix along with the water, cinnamon, protein powder and egg whites. Stir until combined and set aside.

Heat a skillet over medium heat and spray with cooking spray so the pancakes do not stick.

While the pan is heating up, prepare the cream cheese mixture swirl by mixing the fat-free cream cheese, additional cinnamon, and Stevia Brown Sugar blend. It should be a thin consistency that is easily spreadable.

Once the pan is heated, divide the pancake batter into 3/4 cup portions and spread onto the pan in a shape of a pancake to cook. Split the cream cheese mixture into two equal portions and drop spoonfuls of it right into the pancake while it is cooking. Using a spoon, cover the cream cheese spread with the batter from the pancake so it is not visible.

Once the edges start to brown on the pancake, carefully flip it with a large spatula and cook the other side. Serve and enjoy!!
