Makes 8 Servings. Each Serving: 72 Calories; 10C/1F/6P - 2 Fiber

Ingredients

  • 1 Egg
  • cup Egg whites
  • 160 ml Milk (I used Fairlife 2%)
  • ¼ cup Applesauce
  • 1 tsp Vanilla
  • 2 tbsp No Sugar Added Syrup (I used E.D. Smith)
  • 35 g Whole Wheat Flour
  • 30 g Vanilla Protein Powder (I used Clean Simple Eats)
  • 1 tsp Cinnamon
  • 200 g Apples. sliced thinly and quartered
  • 1 tsp Baking Soda

Instructions

  1. Preheat oven to 350F.

  2. Mix together all of the sweet ingredients in a bowl then stir in the dry ingredients until mixed well.

  3. Fold in the sliced apples (I used a mandolin to get them thin enough so they work in this recipe - they have to be sliced very thinly).

  4. Spray a loaf pan with non-stick cooking spray and pour the mixture into it.

  5. Bake for 40-45 minutes or until cooked completely through.
