Mexican Salad

The tastiest way to get your veggies in!

Mexican Salad

Makes 8 Servings. Each Serving: 70 Calories; 10C/3F/2P

Ingredients

  • 1 Onion, Chopped
  • 1 Avocado, Cubed
  • ¾ cup Whole Kernel Corn, Drained
  • 1 Tomato, Diced
  • 1 cup Cilantro, Finely Chopped
  • 1 Red Pepper, Chopped
  • 1 Cucumber, Chopped
  • 5 Green Onion Stalks, Diced
  • 1 tsp Salt
  • ½ tsp Pepper
  • 1 tbsp Minced Garlic
  • ¼ cup Lime Juice

Instructions

  1. Once all ingredients are diced and chopped, mix in a large bowl and stir in the lime juice and seasoning.

  2. Enjoy!
